Holidays

Thanksgiving is a very busy time of year here in the sunny south, but it tends to get even busier now through to the end of the year, because then there’s Hanukkah, Christmas and New Years.

Holidays are a time of family, friends, joy, thankfulness, and of course stress. When you have an autoimmune disease the last thing you need is stress as it can cause all kinds of problems including flare ups.

There are so many things to do – shopping, preparing, wrapping, meal preparation, entertaining and decorating all of which add to the stress of the holidays.

One of the things I try to do to help me with the stress issue is to make lists, and stick to them. I start about a month in advance and begin listing all the things I need to do to get through any particular part of the holidays. A list for the people expected to come and of course in that list, if it’s appropriate, what they will bring to make things a bit easier for that day. A list for the things that will need to be prepared and/or cleaned for that event. Then, of course, a shopping list of the items needed for that event. I know that’s a lot of lists, but it’s how my brain works and I need to compartmentalize it all!

The first list is of the people who will be involved and to be emailed. Once thee emails have been answered, I can then make out my shopping list of the items needed to be completed by me. Then off to shop.

About a week or two ahead of the event I start my preparation. This helps a lot to reduce last minute stresses. I start baking and cooking ahead of time so that there isn’t a lot of prep work needed the day of the event.

Here’s an example of what I do the week ahead to get ready for Thanksgiving:

Saturday/Sunday
Make liver pate
Make pumpkin pie spice
Make cranberry sauce

Monday
Make cookies
Make pie crust and refrigerate
Mix pumpkin pie ingredients and store in fridge

Tuesday
Make Sweet Potato Casserole and store in fridge
Take turkey out of freezer in the morning and place in cooler in a bag of cold water to thaw in cooler

Wednesday
Make pumpkin pies
Make gravy
Make brine for turkey and put turkey in bag in cooler overnight
Clean all dishes and cutlery needed
Dust
Clean kitchen
Set up dining room, clear off counter and prepare serving areas

Thursday
Clean out turkey roaster
Make dressing and stuff and cook turkey
Take Liver pate out of fridge and arrange with crackers on plate
Heat up Sweet Potato Casserole and reheat gravy
Take cranberry sauce out of fridge to come to room temperature
Take pies out of fridge just before seating for dinner
Put dressing out in bowls
Carve turkey

Black Friday
Hopefully a day of rest!
