AIP Approved Fudgsicles

Oh my goodness, are these ever good. I made a batch of them up a couple of days ago and we are having a hard time staying away from them.

If you aren’t on any special diet and would like a chocolate fix, these can do the job just fine.

I hope you think about trying them, they are sooo very good!

The original recipe comes from Mika at slightlylostgirl.com. I’ve tweaked it a bit, but it is basically the same recipe just not as sweet!

AIP Approved Fudgsicles

A rich creamy fudgsicle recipe that you can enjoy whether you are following the autoimmune protocol or not.

Ingredients

  • 2 ripe avocados
  • 1 cup full fat coconut milk
  • 5 tbs maple syrup you can use less if you are sensitive to sugar
  • 1 tsp vegetable glycerin
  • 10 tbs or about ⅔ cup carob powder (or cocoa powder)
  • tsp pure vanilla extract

Instructions

  1. Add all ingredients to blender and blend until smooth
  2. Spoon the mixture into Popsicle forms
  3. Wait until frozen 2-4 hours depending on your freezer
  4. Enjoy!

Recipe Notes

The mixture will be quite thick, which makes for the rich final taste. If you prefer to use 100% cocoa or cacao powder and it doesn't bother your tummy feel free to substitute it for the carob!

The vegetable glycerin helps to keep the bars soft so you don't have a solid brick to bite into! I get mine on Amazon.ca.
