AIP “Bulletproof” Style Dandelion/Chicory Coffee

Have you ever heard of or tried Bulletproof Coffee? If you haven’t you are seriously missing out on a treat!

Bulletproof coffee is a blend of hot coffee, coconut oil (or MCT oil – medium chain triglyceride oil), and butter. Mix all together in a blender. Pour into a cup and enjoy.

Well, there is another beverage for those of us who are on the Autoimmune Protocol that takes the place of coffee, as it is a seed and contains caffeine, and that is Dandelion Tea. In this case we also use Chicory to create a “coffee” like taste.

OK, so you know what coconut oil is, but what is MCT oil! MCT oil helps your body reduce fat and puts the body into ketosis (according to Web MD) ketosis is a normal metabolic process, something your body does to keep working. When it doesn’t have enough carbohydrates from food for your cells to burn for energy, it burns fat instead. As part of this process, it makes ketones. 

If you’re healthy and eating a balanced diet, your body controls how much fat it burns, and you don’t normally make or use ketones. But when you cut way back on your calories or carbs, your body will switch to ketosis for energy. It can also happen after exercising for a long time and during pregnancy. For people with uncontrolled diabetes, ketosis is a sign of not using enough insulin.

Ketosis can become dangerous when ketones build up. High levels lead to dehydration and change the chemical balance of your blood.

Some benefits of MCT oil are: it’s easier to digest; it’s a good source of energy; it helps support hormones; and it can help improve gut and immune health.

I found this recipe on Mickey Trescott’s site Autoimmune Wellness, and it is just in time for me. I went to buy my regular Dandelion Tea when we came back from Florida and low and behold it isn’t anywhere to be found! How unfortunate for my friends at Medicinal Traditionals, as I’ve found a new love.

Even though I have to put the tea bags together myself, it really doesn’t take much time and it gives me some time to take a breath during the week. I can make up several bags at a time and store them in a glass container, so that when I need one, it’s there already made up.

If you decide to make this recipe, please be sure to only have one per day as it is also a liver detoxification drink due to both the dandelion root and the chicory root. Great way to clean out your system to get rid of toxins though.

So how do you make this “coffee”? Here’s the recipe.

  • 1/2 teaspoon  roasted dandelion root
  • 1/2 teaspoon  roasted chicory root
  • 8 ounces boiling water
  • 1/2 tablespoon  coconut concentrate*
  • 1/2 tablespoon coconut oil or MCT oil (see information above)
  • 1 teaspoon latte mixture (carob, cloves, ginger, mace, cinnamon)


  1. Place the dandelion root and chicory root in a tea bag and pull closed.

  2. Put tea bag in a cup and pour in the 8 oz. of boiling water.

  3. Let steep for 4-5 minutes. (I like to cover the cup with a saucer to keep the tea hot).

  4. Place the coconut concentrate, coconut oil, latte mixture, and “coffee” into a blender jar and blend for 30 seconds with an immersion blender, until creamy and frothy. Enjoy!

Recipe Notes

*Coconut concentrate is otherwise known as coconut manna or coconut butter. It is solid at room temperature and sold in a jar.
