Breakfast is the hardest meal for me. I usually make a smoothie because they are so simple to put together. But every now and then I need a change and this recipe is one I will make when I want something different! It has such great flavour and just hits the spot when you are hungry.
It does take a bit of preparation, so be warned.
This recipe actually makes enough for two, but it can be doubled.

Breakfast Sweet Potato Hash (AIP, Paleo, Gluten-Free)
Extra Equipment: Skillet with lid, Spatula, Dish for serving
Prep Time 5 minutes
Cook Time 15 minutes
Total Time 20 minutes

Ingredients
- 1 Cup Sweet Potatoes finely diced
- 1/2 Cup Onions finely diced
- 1 Tbsp Coconut Oil
- 1/4 tsp. Sea Salt
- 1/8 tsp. Garlic Powder
- Pinch Black pepper (omit if on elimination phase of AIP)
- Sprinkle Mace and Ground Ginger
Instructions

Heat coconut oil in medium skillet over medium heat.

Add sweet potatoes and onions to skillet, cover and cook for 7-10 minutes, stirring frequently. Turn down heat if it seems to brown too quickly.

Remove lid and sprinkle salt, pepper (if using), garlic powder, mace, and ground ginger. Stir to mix well and heat another couple of minutes until sweet potatoes are soft.

Serve with your choice of breakfast protein.
