Butternut Squash Soup – Two Ways (AIP, Paleo, Gluten-Free)

I love soups any time of the year and this one is no exception. Butternut Squash soup is one of my favorites and it’s not that difficult to make.

  • 1 Tbsp Coconut Oil
  • 2 lb. butternut squash peeled, seeded, and cut into 1" cubes
  • 2 Granny Smith apples cored and sliced
  • 1 large onion chopped
  • 1 tsp. Dried basil
  • 1 tsp. Dried ginger
  • 2 Cups chicken or vegetable broth (preferably homemade)
  • 1 tsp. Sea Salt or to taste


  1. In saucepan, heat oil over medium heat; cook squash, apples and onion until almost tender. Add basil and ginger; cook, stirring, for 2 minutes. Add broth; bring to boil. Cook over low heat for 10 minutes or until squash is tender. Using slotted spoon, transfer squash mixture to food processor; cover and blend until smooth, adding enough cooking liquid to make desired consistency.

Alternate method:

This soup can also be made in an electric pressure cooker. I like making my soups this way because a lot of times, I'm in a hurry and doing it this way cuts down the time a great deal.

Using the electric pressure cooker, heat the oil in the internal pot and cook the squash, apples, garlic and onions on the saute setting until almost tender - about 5 minutes. Add the basil, ginger and salt and cook another 2 minutes.

Add the broth. Lock the lid on the pressure cooker, ensuring the knob is set to pressure and set the cook time manually for 12 minutes on pressure high.

Once the timer finishes, use the quick release method to release the pressure.  If the inner pot is stainless steel, using an immersion blender in the pot of the pressure cooker, puree the soup to your liking. If the pot isn't stainless steel, remove the contents to a blender and process until pureed to your liking.

You could serve the soup with a dollop of whipped coconut cream if you wish.
