With Spring here, this recipe should get a lot of use. It’s easy to make, keeps well in the fridge, and can be used as a marinade as well. So versatile. Now just need some lettuce, red onion, English cucumber and Kalamato olives, and we’re all set.
Greek Salad Dressing
This delicious Greek salad dressing recipe is easy to make and perfect for spring and summer salads. Salad will never be boring again with this flavor-packed Greek salad dressing drizzled on it.
- 3/4 cup olive oil
- 2 tsp garlic powder
- 2 tsp dried oregano
- 2 tsp dried basil
- 1.5 tsp pepper
- 1.5 tsp salt
- 1.5 tsp onion powder
- 1.5 tsp Dijon style mustard
- 2/3 cup wine vinegar
- juice of one half lemon
Combine all ingredients. You can use an immersion blender to combine the ingredients if you want. I usually don’t, but do keep in mind that this does separate and the herbs and spices float to the top pretty quickly.
Store in a mason jar or another lidded container. Keep refrigerated. Shake well before using.
Use this on salads, but it could also work as a marinade.
Cut up cucumbers, some red onion, add kalamato olives and romaine lettuce, drizzled on some of this dressing, and served it as a healthy side dish with dinner.
