This is my take on a Beef Stew that has been around for a very long time.
I made this for dinner and my husband insisted I post it on my blog, so here it is.
Instant Pot Beef Stew a la Louise
Another beef stew in the pressure cooker. Could it be a bit different? I think so.
- 1 Tbsp. Avocado Oil or coconut oil
- 1 lb. Lean Stewing Beef
- 1 Med. Sweet Potato cut in large chunks
- 1 Med. White Sweet Potato cut in large chunks
- 1 Extra Large Carrot cut in large chunks
- 1 Med. Onion Chopped
- 2 tsp. Dried Rosemary
- 2 tsp. Dried Oregano
- 2 tsp. Dried Thyme
- 1 tsp. Sea Salt
- 2 cups Beef Broth (homemade)
- 2 Tbsp Arrowroot Powder
- 2 Cups Fresh Spinach
Set the Instant Pot on Saute and place oil in stainless steel pot.
Heat oil for a few minutes.
Add stewing beef to pot and saute for about 5 minutes or until browned.
Add onion, carrots, sweet potatoes both regular and white, spices, and broth to pot.
Turn off pot. Then place lid on. Close vent to pressure setting.
Press Meat/Stew button and set time for 25 minutes.
Once the timer beeps, quick release pressure. Once all pressure is released, remove lid carefully as it will be very hot.
Mix arrowroot starch with some water and add to the pot. Stir well.
Add the spinach to the pot.
Return the lid to the pot making sure the valve is set to pressure.
Press the manual button and set time for one minute.
Once timer beeps, turn off the Instant Pot. Quick release the pressure.
Stir the stew and serve right away.
My husband just loves adding Parmesan cheese to his stew and says this one is no exception. So if you are so inclined, go ahead and try it with this one.
