This recipe is another of my favorites. When I was a youngster, my mother used to make a dish she called “baked dish” with potatoes, rice, and fried lamb chops, along with the grease from the lamb once cooked. This was my absolute favorite and I’m going to have to see what I can do to replicate it in the AIP/Paleo vein. However, for now, this one will have to do!
Lamb Chops (AIP, Paleo)
- 1/2 Tbsp Coconut Oil you could use Avocado or Olive instead
- 4-6 1-1/2 Inch Thick Lamb Chops
- 1/2 Tbsp Dried Rosemary (or 2 Tbsp. fresh)
- 1/2 tsp. Dried Oregano
- 1/2 tsp. Garlic Powder
- 1/2 tsp. Onion Powder
Mix spices together in a small dish. Put aside.
Clean lamb chops of any extra fat you don't want.
Heat oil in saute pan on medium heat.
Rub spices on both sides of each lamb chop.
Place lamb chops in saute pan and cook 4-7 minutes on first side. Flip and cook another 4-7 minutes on second side. Timing will depend on your finished preference of doneness - rare, medium rare, medium, medium-well or well done.
Let rest covered for 5 minutes.
Recipe NotesServe with your choice of accompaniments - my choice would be: sweet potato, and asparagus or Swiss chard, with maybe a side salad. Alternative - preheat BBQ on medium-high heat (about 400F). Place lamb chops on grill and cook first side 4-7 minutes, flip and cook another 4-7 minutes depending on your cooked preference as noted above.
