Louise’s Meatloaf (Iron Rich)

I’ve been recently messing around with my meatloaf recipe and thought perhaps it would be a good thing to give to you here. It’s moist and very good according to my hubby.

Louise's Meatloaf

This is a nice and easy recipe to make. No special ingredients, probably most of what you have in your kitchen or larder right now.

Cook Time 1 hour
Total Time 1 hour 10 minutes
Servings 4

Ingredients

  • 1 lb ground beef
  • 1/2 cup mixed vegetables (carrots, celery, onion)
  • 1/2 tsp dried basil
  • 1/2 tsp dried oregano
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 2-3 slices bacon (optional)

Instructions

  1. Preheat oven to 350F.

  2. Place 1/2 carrot, 1/2 onion, 1/2 celery stalk into your food processor and process until you see small bits of vegetables.

  3. In a medium size mixing bowl place the ground beef, a 1/2 cup of the mixed vegetables, and the herbs and spices.

  4. Mix thoroughly until all the vegetables are mixed into the beef well.

  5. Place into an 8x4 loaf pan and evenly distribute the mixture.

  6. Place bacon across the top of the meatloaf before placing in the oven (if using)

  7. Put in preheated oven and bake for 60 minutes.

  8. Serve with your choice of sides - I would do cauliflower rice and mixed vegetables.

If you would like to make burgers instead of meatloaf, this makes 5-6 medium size burgers.
