Mashed Cauliflower (AIP, Paleo, Dairy and Gluten-Free)

Are you missing mashed potatoes?

Well, no more, here’s an easy replacement to use for those who cannot eat “nightshade” vegetables.

Cauliflower has become my go-to vegetable for many things these days.

Mashed Cauliflower (AIP, Paleo, Dairy and Gluten-Free)

Extra Equipment: Double Boiler, Blender

  • 1/2 Head Cauliflower
  • 2 Tbsp Coconut Oil
  • 1/4 Cup Full Fat Coconut Milk room temperature - shake can before pouring
  • Chives or scallions (spring onions) finely chopped - Optional
  • Salt to taste


  1. Place the cauliflower florets into a large double boiler and steam the cauliflower florets.
  2. Place the softened cauliflower along with the melted coconut oil, coconut milk, and salt into a blender and blend until smooth.
  3. Top with chives or scallions.
