Microwave Cinnamon Raisin English Muffin (Paleo, Gluten-Free, Dairy-Free)

This is such a quick, easy and tasty recipe.

Total Time 4 minutes
Servings 1 serving


  • 1 tablespoon  coconut flour
  • 2 teaspoon  ground flax seed
  • 1/2 teaspoon  ground cinnamon
  • 1 teaspoon  coconut sugar
  • 1 tablespoon  raisins
  • 1 large egg white or a small whole egg
  • 1 teaspoon  avocado oil (or coconut or olive oil)
  • 1 tablespoon  water


  1. Mix coconut flour, ground flax seed, cinnamon and coconut sugar together in a small bowl or ramekin. 

  2. Mix wet ingredients together in another small bowl or ramekin. (It is not necessary to grease the bowl before microwaving.)

  3. Add dry ingredients to liquid and stir well.

  4. Microwave on high for 2 minutes. 

  5. Using oven mitt, remove muffin from ramekin and let cool slightly. 

  6. Cut in half horizontally and toast. 

  7. Top as desired.

Recipe Notes

I like to top with Paleo whipped butter, and/or Tiger Nut butter.
