I try to roast a turkey breast at least once a month. It gives me the opportunity to make a bone broth from the bones, that has amazing flavor. Of course, soup, or another turkey based meal can be achieved using this roasted version as well.
Roast Turkey Breast (AIP, Paleo, Gluten-Free)
- 1/2 Turkey Breast bone in, skin on
- olive oil
- AIP Poultry Seasoning See recipe below
- 4 Large Carrots cut into rounds
- 1 Sweet Onion cut into 8 pieces
Preheat the oven to 350F degrees. Place the carrots and onion in a 9 x 13 baking pan or large oval baker. Drizzle a little Olive oil on the carrots and onion.
Place the turkey atop the carrots and onion. Drizzle with more Olive oil.
Generously sprinkle turkey with poultry spice blend.
Insert probe thermometer into thickest part of turkey breast.
Roast until temperature comes up to 162F degrees . It should continue to raise to 165F degrees (about 60-80 minutes) .
Remove turkey and place on cutting board. Allow to rest before slicing.
Turn oven up to 450F degrees and place carrots and onion back in until easily pierced with fork.
Slice turkey and serve with carrots and onion.
