Are you missing mashed potatoes?
Well, no more, here’s an easy replacement to use for those who cannot eat “nightshade” vegetables.
Cauliflower has become my go-to vegetable for many things these days.
Mashed Cauliflower (AIP, Paleo, Dairy and Gluten-Free)
- 1/2 Head Cauliflower
- 2 Tbsp Coconut Oil
- 1/4 Cup Full Fat Coconut Milk room temperature - shake can before pouring
- Chives or scallions (spring onions) finely chopped - Optional
- Salt to taste
Place the cauliflower florets into a large double boiler and steam the cauliflower florets.
Place the softened cauliflower along with the melted coconut oil, coconut milk, and salt into a blender and blend until smooth.
Top with chives or scallions.
