Recipe Notes

Alternate method:

This soup can also be made in an electric pressure cooker. I like making my soups this way because a lot of times, I'm in a hurry and doing it this way cuts down the time a great deal. Using the electric pressure cooker, heat the oil in the internal pot and cook the squash, apples, garlic and onions on the saute setting until almost tender - about 5 minutes. Add the basil, ginger and salt and cook another 2 minutes. Add the broth. Lock the lid on the pressure cooker, ensuring the knob is set to pressure and set the cook time manually for 12 minutes on pressure high. Once the timer finishes, use the quick release method to release the pressure.  If the inner pot is stainless steel, using an immersion blender in the pot of the pressure cooker, puree the soup to your liking. If the pot isn't stainless steel, remove the contents to a blender and process until pureed to your liking. You could serve the soup with a dollop of whipped coconut cream if you wish. This is a Husband approved recipe!
