Pressure Cooker Lazy Cabbage Rolls (AIP, Paleo, Nightshade-Free)

I just love cabbage and cabbage rolls are no exception. And bonus, it’s all good for you.

Mine aren’t made with beef or pork, but with ground turkey and, of course, no tomatoes! A blogger friend of mine (at Food To Heal Ourselves) posted her Easy Nomato Sauce last week. I made it and am so impressed with it, I’ve included it in this recipe.

This is such an easy recipe to make, it only takes about 10 minutes to put together, and another 20-30 minutes from start to finish in the pressure cooker. Far easier than having to wrap up each leaf of cabbage and bake in the oven.

Pressure Cooker Lazy Cabbage Rolls (AIP, Paleo)

Ingredients

  • 1 lb Ground Turkey
  • 1/2 Medium Onion diced
  • 1 Clove garlic minced
  • *1 tsp. Ginger ground
  • 1 Large Red or Yellow Beet peeled and diced
  • 2 Cups Cauliflower Rice blanched
  • 1/2 Large Cabbage cut into 1 inch slices
  • 2-3 Cups Nomato sauce (recipe link above)
  • Sea Salt to taster

Instructions

  1. Chop onion, beets, and cabbage and put aside.
  2. Blanch cauliflower rice and drain.
  3. In a large bowl, mix together the ground turkey, cauliflower rice, diced onion, spices and diced beet.
  4. Spread 1/3 of the nomato sauce in the bottom of the pressure cooker pot.
  5. Take about 1/3 of the sliced cabbage and place on top of the sauce.
  6. Using your hands, spread about 1/2 of the ground turkey mixture on the cabbage.
  7. Repeat the last 3 steps. End with the last 1/3 of the sauce on top of the cabbage.
  8. Place the lid on the pressure cooker and set the vent knob to pressure.
  9. Select High pressure and set the time for 12 minutes. (Pressure needs to build up before the timer will start).
  10. Once the cooker has finished it's program, use the Quick Release method to release the pressure.
  11. Serve and enjoy.

Recipe Notes

If you wish to bake this in the oven instead of a pressure cooker, set oven temp. to 350F and once all is together in your pot of choice (dutch oven would work well), bake for about an hour - check the cabbage to ensure it is cooked through. * Ginger is good to help prevent that gas you get after eating cabbage, or any other cruciferous vegetables.
