AIP Cereal Flakes


  • 2 Cups Unsweetened Banana Chips (or Plantain chips)
  • 1-1/2 Cups Unsweetened Coconut Flakes
  • 2 Tbsp Unflavored Gelatin
  • 1/4 Cup Coconut Flour
  • 1/2 tsp Salt
  • 1/4 Cup Manuka Honey (or to your desired sweetness)
  • 1 Tsp Vanilla
  • 1/4 Cup Water
  • 1 tsp Cinnamon (optional)


  1. Preheat oven to 350 degrees Fahrenheit and grease a large cookie sheet with coconut oil.
  2. In a food processor, combine the banana chips and coconut flakes. Process until powdery.
  3. Add in the gelatin, salt and coconut flour (and cinnamon if using) and pulse to combine.

  4. Add remaining ingredients and process until incorporated.
  5. Press the dough onto the greased cookie sheet very thinly.

  6. Bake for 10 minutes. At this point it will look like a big flatbread. Let it cool a bit and either cut (using a pizza cutter) or tear it up into small cereal-like pieces.

  7. Bake for 5-10 minutes more, stirring a couple times, until the flakes are golden and crisp. They will crisp up more as they cool as well. Watch closely so as not to burn the cereal.

Recipe Notes

As I could not find any Unsweetened Banana chips, I used Plantain chips instead and it turned out very well.
