I roasted up a big tray of vegetables for dinner and not much of it was eaten, so I thought, why not make a soup out of the leftovers. Well, here’s how it went. (This can be made either in a pressure cooker or stove top).
Place lid on pressure cooker, set high pressure for 12 minutes, and press start (if required).
If you find the soup is too thick once blended, add your preferred broth in one cup increments until you reach your desired thickness.
You can use any combination of vegetables you like to make this soup. Try different ones to get a different flavour.
I also have served this with a tablespoon of sour cream (AIP) - adds a nice flavour.
